Guacamole is a traditional favorite Mexican snack that can also be served as a side dish. It is basically made from a raw avocado with a few other ingredients such as tomato, onion, garlic, cilantro, and spices to taste. Guacamole has a creamy texture. Usually, this dish is served in a deep bowl with tortilla chips or crackers.
Guacamole is a quick and easy recipe. Take a fresh raw avocado, remove the avocado pit and mash up the pulp with a fork. Add chopped tomato, lime juice, grinded onion, and garlic cloves. Toss with salt or other seasonings. It is essential to use only ripe avocados for guacamole meals. Hard and unripe avocados won’t give you proper texture for the guacamole.
Authentic guacamole recipe comes from Mexico and locals use molcajete to prepare it - it's a stone mortar and pestle kitchen device. If you don't have it, use a regular cutting board and a bowl to stir all ingredients.
Guacamole is easily oxidized from contact with air and quickly turns brown. To keep the bright green color of your homemade guacamole, sprinkle it with a bit of lemon or lime juice.
Next, cover guacamole tightly with food wrap and put it in the fridge to prevent oxidation.
The other typical hack is to put an avocado pit in the bowl with the guacamole. It will preserve the initial color for a few hours.
Guacamole retains its freshness in the fridge; you can store it in a hermetically sealed container for up to 3 days.
To preserve it longer, freeze guacamole. But the main rule is to freeze only the avocado base without additives. Put the base into a plastic container or a plastic freezer bag and hide it in the freezer.

Peel the avocado and remove the avocado pit.
