You only need 25 minutes to prepare these double chocolate cookies. And you can’t even tell that the cookies are gluten-free or vegan by their taste
Gluten-free flour
150 g
Cocoa powder
40 g (5 tsp)
Sugar
100 g (½ cup)
Brown sugar
100 g
Baking powder
3 g (½ tsp)
Salt
1 g (⅕ tsp)
Coconut oil (or butter)
100 g (20 tsp)
Applesauce
50 g (10 tsp)
Coconut milk, Chocolate drops
Please follow the next steps:
1
Preheat your oven to 350 degrees Fahrenheit.
2
Mix the flour, cocoa powder, baking powder, and salt in a medium bowl.
3
Use a large bowl with a hand mixer or a stand mixer to combine white sugar, brown sugar, coconut oil, and applesauce. Mix until smooth, light, and a little fluffy.
4
Combine the dry and wet ingredients using a big spoon. Add a couple of tablespoons of coconut milk if the mixture is too dry to stir. Add vegan chocolate chips and mix again.
5
Put the dough in the fridge for 15 minutes.
6
Make 1-inch balls from the dough and place them 2 inches apart on a baking tray covered with parchment paper. Press them a little to make the cookies flat.
7
Bake for 12 minutes. Transfer to a cooling rack 5 minutes after baking.
