Have you ever heard of Italian Wedding Soup? It has such a name for the perfect match of healthy and nutritious ingredients. It's like a married couple whose members can live in peace alone, but they do incredible things in tandem! In our case, it is an extraordinary taste of Italian traditions and the culinary heritage of generations!
Olive oil

Please follow the next steps:

Put one spoon of olive oil in a pot, choosing medium heat.

Add the chopped onion. Cook until it's soft.

Add the chopped garlic and canned beans. Cook for another minute.

Add the previously prepared chicken broth with shredded chicken breast and a pinch of salt.

Add the rinsed and chopped escarole and wait 2-3 minutes.

Cover the pot. Simmer until the escarole is the softness you prefer (try not to overcook it to avoid bitterness).

Squeeze the lemon juice and taste for seasoning. Add rosemary. Then put salt to taste.

Serve with a few slices of whole-grain bread. Enjoy your meal!
Take the vegetable stock instead of the chicken broth, it contains less calories.
Buy firm and heavy sized lemons with a smooth, thin skin. It means they are underripe and contain more juice.
