Most people do not know that jasmine rice is softer than white rice, which means you need less water for the rice to be cooked, so it goes soft and fluffy rather than gummy. Usually, most rice is cooked with 1.5 cups of water for each cup, but this one is reduced to 1 1/4 cups for jasmine rice. Yes, 1/4 cup makes a significant difference! 

Before you start cooking, you should know the golden rule of this dish. It sounds like "No rinsing." But if your soul requires you to rinse the rice to clean it or if you just can't break the habit, do it the following way. Place rice in a bowl, and fill with water. Then swish with a hand and drain. Repeat 3 to 4 times. Water will never be completely clear. So, drain in a colander, and cook according to the recipe.

    Set rice and water in a saucepan with a tight-fitting lid. Bring to a rapid simmer on medium-high, not covering the lid.

    Turn down to low or medium-low. Let it simmer gently, then place the lid on. Do not raise the lid during cooking.

    Cook for 11-12 minutes or until the rice absorbs water.

    Keep the lid on, then drag it from heat. Rest for about 10 minutes, fluff with a rubber spatula or rice paddle, then serve with a vegetable salad or steak.

  • Opt for brown or wild rice instead of typical white rice. Less processed versions of this grain are higher in fiber, vitamins, and minerals and have a lower glycemic index, which means they won't spike your insulin levels as much as white rice.
