Quick, insanely delicious, simple, for every day! Potato pancakes or draniki came from Belarus. But a significant difference between Ukrainian and Belarusian potato pancakes is meat that is added to Belarusian ones. Traditional, Ukrainian potato pancakes (deruny) contain only potatoes. Of course, fillings are possible, but it depends on your imagination. The classic recipe does not contain any fillings. Serve derunys hot with unsweetened sauce or sour cream, fresh herbs and vegetables!

Essential ingredients

  • Potatoes

    300 g (1 pieces)

  • Onions

    40 g (½ pieces)

  • Eggs

    20 g (½ pieces)

  • Olive oil

    50 g (1 tsp)

  • Sour cream 20%

    60 g (1 tsp)

  • Garlic

    5 g (1 tsp)

  • Herbs

    1 g (1 tsp)

How to make

    Peel potatoes and onions and rinse.

    To prepare, take a comfortable, deep bowl so that nothing falls out when mixing. Grate the onion into a bowl on a fine grater. It will become like onion puree.

    Immediately grate the potatoes on a fine grater. Stir it with the onion puree so that it does not start to darken.

    Add the egg, salt and a little spice to the bowl. As a spice, ground black pepper and a little paprika will suffice.

    Mix all ingredients until smooth. If juice appears from the potatoes, it will need to be drained.

    For frying, heat up the pan and pour 2-3 mm of olive oil. Spoon a little potato mass and fry over low heat on both sides.

    Ready derunys will become a delicious golden color. Place them on a paper towel to remove excess oil.

    For potato derunys, garlic sauce will be a great addition. To prepare it, mix sour cream with chopped herbs and add garlic, passed through a press.

    Put the finished potato derunys on a plate and top with sour cream sauce. Serve them hot. Enjoy your meal!

Weight Loss Tips

  • For proper deruny, potatoes must be high in starch.

  • You can check whether the oil has warmed up well enough in a pan in a simple way. Dip a wooden spatula into it. If bubbles have gathered around it, then you can start the frying process.

  • Use oil with a high smoke point for frying! Any oil is useful only up to a certain temperature - the smoke point, at which the oil begins to burn and toxic substances are formed in it.
