There are many recipes for Ukrainian honey cake. They are divided into two groups. You can bake one and cut it into several layers. But the classic is a cake with 12 thin patties smeared with sour cream. It has light sourness, which harmonizes exceptionally well with the honey taste of the base.

Let's start preparing the base for the honey cake. To do this, combine the following ingredients: 2 eggs, sugar, vanilla sugar, and melted butter.
We give the dough a honey flavor by adding 3 tablespoons of honey and 1 teaspoon of soda to it. Do not extinguish soda with vinegar.
We put the resulting mass on the stove and cook according to the principle of a water bath. The assembly should double in size. Stir until it does.
Remove the container with the mass from the fire, and add flour. It's good if you can sift it through a sieve beforehand. Knead the dough for honey cakes.
The base for the honey cake is ready. Divide it into 7 equal portions, and roll each into a ball.
With a rolling pin, roll each ball into a pancake; its thickness should be no more than 1.5 cm.
We spread the pancakes on a baking sheet or in baking dishes and bake each for 5 minutes at 180 degrees. These will be the cakes for the honey cake.
Let's start preparing the honey cake-cream: to do this, beat 500 g of sour cream with 80 g of powdered sugar.
The cream consists of butter and boiled condensed milk. Beat these ingredients separately.
We combine sour cream with butter and boiled condensed milk and beat again.
We cool the finished cakes. Trim with a knife, giving the correct circle or rectangle shape. We turn the honey cake, put the patties on each other, and coat each with cream. The honey cake must be completely glazed, including the sides.
Trimmings from cakes will serve as a decoration, chop them into crumbs, and sprinkle honey cake on top. The honey cake should soak, so leave it in the refrigerator for a few hours. Then you can call everyone to the table. Enjoy your meal!
