This yummy and healthy zucchini noodles recipe will make you feel full of energy. Vegetables supply the nutrients our cells need to function optimally. The challenge is finding vegetable dishes that are easy and taste amazing. Vegan zucchini noodles with basil and garlic taste lovely and only have three ingredients. It's a super easy dish to cook! Before you start making your delicious lunch, make sure you follow these tips:

  • If your zucchini are medium to large, we recommend "sweating" the spiralized veggie before adding it to the pan. To "sweat" the zucchini noodles, place them in a colander, then place the colander in the sink or over a bowl. Sprinkle it with salt and toss well. Allow them to sit for about 15 minutes – the longer it sits, the more water is released. After this time or longer, squeeze all the juice out with a paper or kitchen towel.
  • Don't season with salt until the end of cooking. It will prevent a mushy texture. Once the zucchini is cut, the plant's cell walls are open, exposing the water inside the flesh. Salt draws out the noodles' water because more surface area is created.

How to make

    Spiralize your zucchini into noodles.

    Make a few cuts so the noodles are not super long.

    Heat a skillet on medium heat.

    Add olive or vegetable oil. Once warm, put garlic and red pepper flakes (if using). Sauté for 30 seconds until garlic is fragrant.

    Place zucchini noodles and sauté for 3-4 minutes, stirring, until al dente.

    Remove from heat, and stir in basil leaves and salt.

    Top with toasted pine nuts or basil.

Weight Loss Tips

  • Vegetables such as eggplant, sweet and hot peppers, zucchini, and cucumber, are ideal for fat burning.

  • Opt for small or medium zucchini. Large veggies have a higher moisture content, so they'll release too much water. Long thin zucchini have fewer seeds and less juice. Also, choose zucchini with firm and smooth skin.

  • 20 minutes after each meal, have a glass of warm water. This both encourages you to eat less and aids digestion.
