  • Buy well-marbled meat. The more marbled it is, the more delicious and tender it'll be.
  • For best results, season your prime rib on all surfaces with kosher salt for at least 45 minutes before cooking it. Or even the day before, leaving it in the fridge uncovered overnight.
  • Allow the rib to rest before serving. Cutting a hot roast straight out of the oven will result in juices spilling out all over the kitchen board from areas in which the juice concentration is too high.

How to make

Please follow the next steps:

    Take the ribs out of the package and place it in a roasting pan. Let the meat come to room temperature for about 30 minutes. Meanwhile, preheat the oven to 450º.

    Generously season all sides of the ribs roast with salt and ground black pepper. Place roast in a roasting pan fat-side up.

    Put half the rosemary in the bottom of the pan around the roast.

    Roast for 30 minutes, then reduce heat to 350º and cook for 1 hour 30 minutes more for medium-rare.

    Remove the cooked ribs from the oven and cover with foil. Let rest for 20 minutes.

    Serve the dish on a platter with the remaining half fresh rosemary. Enjoy!
